Is it true that the only heated grips that fit the Vision AND controlled by stock toggle switch come from Ma Polaris?

Yes. Ma Vics heated hand grips use a dual filament heater and thus a double throw toggle switch that either turns one filament on, or both. All others use a single filament and a vary the power to achieve the heat levels. You can use the stock toggle with any of the other grips, but they will always be at full heat. You would need to put the variable controller in somewhere to adjust it. I am using the Avon Heated Grips and mounted the controller next to the radio controls. It has four level settings.

Hmmm, sounds like a resistor and diode are needed. Anybody tried this?

The witchdoctor video I saw, they drilled a hole in the console for the Avon controller. I would like to use the double throw switch that is already installed.

I use a potentiometer mounted on the left console skirt instead of the controller supplied by Avon. I run it through the low side of the console switch, and have the high side going direct. The reason for the POT, is that unlike a resistor, it doesn't generate any heat, and it doesn't reset to off every time the bike is restarted like the included 4 way controller. It just maintains it's last setting, based on where I rotate the POT, and which side (usually always on low) I have the console toggled to.
